Description
A flavorful side dish combining nutty wild rice with tart cranberries.
Ingredients
- 1 cup wild rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- Salt and pepper to taste
Instructions
- Rinse the wild rice under cold water.
- In a medium saucepan, heat olive oil over medium heat. Add the onion and cook until softened.
- Add the wild rice and vegetable broth to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
- Stir in the dried cranberries and chopped pecans. Cook for an additional 5 minutes.
- Season with salt and pepper to taste. Serve warm.
Notes
- For a nuttier flavor, toast the pecans before adding them.
- You can substitute vegetable broth with chicken broth if preferred.
