For the Chicken

Instructions
Marinate chicken with olive oil, honey, lime juice and zest, garlic, salt, and pepper for 20–30 minutes.
In a skillet, cook chicken over medium-high heat until caramelized and cooked through, about 8–10 minutes.
Toss avocado with cilantro, red onion, lime juice, and a pinch of salt.
Layer cooked rice into bowls or use a food ring mold for stacks. Top with honey lime chicken, then the avocado mix.
Garnish with lime wedges, jalapeños, or a drizzle of honey if you like a little extra sweet heat.
Notes
