Ingredients
  

For the Chicken

  • 1 lb boneless skinless chicken breast or thighs diced
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 lime (juice and zest)
  • 2 cloves garlic minced
  • salt and pepper to taste

For the Stack

  • 2 cups cooked jasmine or basmati rice
  • 1 large avocado diced
  • 1/4 cup chopped cilantro
  • 1/4 cup red onion finely diced
  • 1/2 lime lime juice
  • salt to taste

Optional Toppings

  • lime wedges
  • extra honey drizzle
  • sliced jalapeños

Instructions
 

  • Marinate chicken with olive oil, honey, lime juice and zest, garlic, salt, and pepper for 20–30 minutes.
  • In a skillet, cook chicken over medium-high heat until caramelized and cooked through, about 8–10 minutes.
  • Toss avocado with cilantro, red onion, lime juice, and a pinch of salt.
  • Layer cooked rice into bowls or use a food ring mold for stacks. Top with honey lime chicken, then the avocado mix.
  • Garnish with lime wedges, jalapeños, or a drizzle of honey if you like a little extra sweet heat.

Notes

This dish works great warm or cold, making it perfect for meal prep. Add black beans or corn for extra flavor and texture.
