Instructions
Preheat oven to 325°F. Grease a springform pan.
Mix chocolate cookie crumbs and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, beating after each addition.
Mix in Kahlua, vanilla, and sour cream until well combined.
Pour filling over the cooled crust. Bake for 50-60 minutes until the center is just set.
Let cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
For extra decadence, top with whipped cream and chocolate shavings before serving!
