Ingredients
  

Crust

  • 1 1/2 cups chocolate cookie crumbs finely crushed
  • 5 tbsp butter melted

Filling

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs room temperature
  • 1/2 cup Kahlua coffee liqueur
  • 1 tsp vanilla extract
  • 1/2 cup sour cream for creaminess

Instructions
 

  • Preheat oven to 325°F. Grease a springform pan.
  • Mix chocolate cookie crumbs and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add eggs one at a time, beating after each addition.
  • Mix in Kahlua, vanilla, and sour cream until well combined.
  • Pour filling over the cooled crust. Bake for 50-60 minutes until the center is just set.
  • Let cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

For extra decadence, top with whipped cream and chocolate shavings before serving!
