  • 1 cup butter softened
  • 1 cup granulated sugar for sweetness
  • 2 eggs large
  • 1 tsp vanilla extract for flavor
  • 2 cups all-purpose flour sifted
  • 1 tsp baking powder for rise
  • 1/2 tsp salt balances flavors
  • 1 tbsp lemon zest freshly grated
  • 1 tbsp lemon juice freshly squeezed
  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream together the butter and sugar until light and fluffy.
  • Mix in the eggs, vanilla extract, lemon zest, and lemon juice.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Gently fold in the blueberries.
  • Scoop dough onto the prepared baking sheet and bake for 10-12 minutes, or until edges are lightly golden.
  • Let cookies cool on a wire rack before serving.
