Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly ground nutmeg
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup unsalted butter melted and cooled
  • 2 cups quick-cooking oats not instant
  • 1 1/2 cups raisins

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
  • In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg.
  • Make a well in the center and add vanilla, egg, and melted butter. Stir until combined.
  • Fold in oats and raisins until evenly mixed.
  • Spread dough evenly in prepared pan with a spatula or fingers.
  • Bake for 22–26 minutes until center is set and edges are golden.
  • Cool completely in pan on a wire rack before slicing.

Notes

You can swap raisins with dried cranberries or add chopped nuts for extra texture.
