Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg.
Make a well in the center and add vanilla, egg, and melted butter. Stir until combined.
Fold in oats and raisins until evenly mixed.
Spread dough evenly in prepared pan with a spatula or fingers.
Bake for 22–26 minutes until center is set and edges are golden.
Cool completely in pan on a wire rack before slicing.
Notes
You can swap raisins with dried cranberries or add chopped nuts for extra texture.
