Ingredients
  

  • 1 cup freeze-dried strawberries divided
  • 1 cup rolled oats
  • 1/2 cup raw almonds
  • 1/2 cup Medjool dates pitted
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 1/4 cup shredded unsweetened coconut
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil melted

Instructions
 

  • In a food processor, pulse the freeze-dried strawberries until they form a fine crumb. Transfer half to a bowl and set aside for coating.
  • Add the remaining strawberry powder, oats, almonds, dates, chia seeds, coconut, salt, vanilla extract, maple syrup, and melted coconut oil to the food processor.
  • Process the mixture until it begins to clump and stick together. If it's too dry, add water a teaspoon at a time.
  • Using your hands or a small scoop, form the mixture into 1-inch balls.
  • Roll each ball in the reserved strawberry powder for a vibrant crunch and extra flavor.
  • Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  • Store in an airtight container in the fridge for up to one week or freeze for longer shelf life.

Notes

Make sure your dates are soft; if not, soak them in warm water for 10 minutes and drain before using.
