These Strawberry Crunch Energy Balls are the perfect no-bake snack — fruity, chewy, slightly crunchy, and naturally sweetened. Great for meal prep or grab-and-go fuel!
In a food processor, pulse the freeze-dried strawberries until they form a fine crumb. Transfer half to a bowl and set aside for coating.
Add the remaining strawberry powder, oats, almonds, dates, chia seeds, coconut, salt, vanilla extract, maple syrup, and melted coconut oil to the food processor.
Process the mixture until it begins to clump and stick together. If it's too dry, add water a teaspoon at a time.
Using your hands or a small scoop, form the mixture into 1-inch balls.
Roll each ball in the reserved strawberry powder for a vibrant crunch and extra flavor.
Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
Store in an airtight container in the fridge for up to one week or freeze for longer shelf life.
