Description
This Blueberry Cottage Cheese Breakfast Bake is a protein-packed, creamy and delicious dish perfect for mornings. Easy to prepare and naturally sweetened.
Ingredients
2 cups cottage cheese (preferably full-fat)
4 large eggs
4 tbsp sweetener (allulose or erythritol)
2 tsp vanilla extract
1 tsp lemon zest
2 tbsp cornstarch or coconut flour
1 ½ cups blueberries (divided)
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large mixing bowl, whisk eggs until smooth.
3. Add cottage cheese, sweetener, vanilla extract, lemon zest, and cornstarch. Mix until combined.
4. Fold in 1 cup of blueberries gently.
5. Pour mixture into a greased 8×8 baking dish.
6. Sprinkle remaining ½ cup of blueberries on top.
7. Bake for 35–40 minutes, or until set and golden.
8. Allow to cool slightly before serving.
Notes
You can use fresh or frozen blueberries.
Store leftovers in an airtight container in the fridge for up to 3 days.
Serve warm or chilled.
