Quick and easy chicken fried rice recipe for busy weeknights
Ingredients
- 2 cups cooked rice (preferably day-old)
- 1 chicken breast, diced
- 2 eggs
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tbsp soy sauce
- 1 tbsp oil
- 1 garlic clove, minced
- 1 tsp ginger, grated
Instructions
- Heat oil in a wok or large pan
- Cook chicken until no longer pink, set aside
- Scramble eggs in same pan, set aside
- Stir-fry vegetables, garlic and ginger for 2 minutes
- Add rice and break up any clumps
- Return chicken and eggs to pan
- Add soy sauce and mix well
- Cook for 3 more minutes, stirring constantly
Notes
- Use cold rice for best texture
- Substitute any protein you prefer
- Add chili flakes for heat if desired
