Ingredients
- 2 lbs chicken breast, cut into cubes
- 1 tbsp olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and sauté until translucent.
- Stir in garlic and ginger, cook for 1 minute.
- Add chicken pieces and brown lightly.
- Mix curry powder and turmeric into the pot.
- Pour in coconut milk and chicken broth, stir well.
- Simmer uncovered for 25 minutes until chicken is cooked.
- Season with salt.
- Garnish with fresh cilantro before serving.
