Ingredients
- 2 boneless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 1 cup cooked rice
- 1 cup black beans
- 1 cup shredded cheese
- 4 large tortillas
- 1/2 cup salsa
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt, pepper, cumin, and paprika.
- Heat olive oil in a pan and cook chicken for 6-7 minutes per side.
- Shred cooked chicken with two forks.
- Assemble burritos by layering rice, beans, chicken, cheese, and salsa on tortillas.
- Fold tortillas tightly and wrap in foil.
- Bake for 10 minutes to melt cheese.

- Store in fridge for up to 4 days.
- Freeze for longer storage.
