Description

Easy meal prep chicken burritos packed with protein and flavor. Perfect for quick lunches or dinners.


Ingredients

  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup cooked rice
  • 1 cup black beans
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1/2 cup salsa


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt, pepper, cumin, and paprika.
  3. Heat olive oil in a pan and cook chicken for 6-7 minutes per side.
  4. Shred cooked chicken with two forks.
  5. Assemble burritos by layering rice, beans, chicken, cheese, and salsa on tortillas.
  6. Fold tortillas tightly and wrap in foil.
  7. Bake for 10 minutes to melt cheese.
