Description
A healthy and flavorful dish featuring bell peppers stuffed with quinoa, vegetables, and spices.
Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 cup black beans, rinsed
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- Rinse quinoa and cook in vegetable broth according to package instructions.
- In a pan, sauté onion and garlic until soft.
- Add tomatoes, black beans, cumin, paprika, salt, and pepper. Cook for 5 minutes.
- Mix cooked quinoa with the vegetable mixture.
- Stuff the bell peppers with the quinoa mixture.
- Place peppers in a baking dish and bake for 25-30 minutes.
- If using cheese, sprinkle on top and bake for an additional 5 minutes.
Notes
- Use any color bell peppers.
- For extra flavor, add fresh herbs like cilantro.
- Store leftovers in an airtight container for up to 3 days.
