Description
A simple and delicious recipe for yellow squash pickles.
Ingredients
- 4 cups yellow squash, sliced
- 1 onion, thinly sliced
- 2 cups white vinegar
- 1 cup sugar
- 1 tablespoon salt
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- 1/2 teaspoon turmeric
Instructions
- Combine yellow squash and onion in a large bowl.
- In a saucepan, mix vinegar, sugar, salt, mustard seeds, celery seeds, and turmeric. Bring to a boil.
- Pour the hot liquid over the squash and onion. Stir well.
- Let the mixture cool to room temperature.
- Transfer to jars and refrigerate for at least 24 hours before serving.
Notes
- Store pickles in the refrigerator for up to 2 weeks.
- For a spicier version, add red pepper flakes.
