Description

A simple and delicious recipe for yellow squash pickles.


Ingredients

  • 4 cups yellow squash, sliced
  • 1 onion, thinly sliced
  • 2 cups white vinegar
  • 1 cup sugar
  • 1 tablespoon salt
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • 1/2 teaspoon turmeric


Instructions

  1. Combine yellow squash and onion in a large bowl.
  2. In a saucepan, mix vinegar, sugar, salt, mustard seeds, celery seeds, and turmeric. Bring to a boil.
  3. Pour the hot liquid over the squash and onion. Stir well.
  4. Let the mixture cool to room temperature.
  5. Transfer to jars and refrigerate for at least 24 hours before serving.
